Beetalicious Lemonade Popsicles

Brilliantly balanced and bursting with Berries and Beets, this popsicle will revive any Ninja after a long day of fun and adventure.

Lemons will super hydrate and alkalize your body, as well as add a tart flavorful burst of sunshine. Vitamin C packed Dark Cherry Bombs and endurance boosting Beetalicious Beets, this is a fruit and veggie combo your kids will never guess could taste and feel so good.

Prep Time: 10 minutes (if fresh juicing, 20mins)
Serving: 8, 4oz popsicles

 

Ingredients:

  • 1lb Frozen Dark Cherries

  • 1 ⅓ cup Beet Juice, 4 Medium Red Beets or Unpasteurized Beet Juice (Whole Foods Juice Bar)

  • ½ cup Fresh Lemon Juice (2 large lemon)

  • 2 tbsp Maple Syrup (optional, replace with 2 tbsp water if you remove)

Tools

  • Blender or food processor (Vitamix or Blendtec are best)

  • Tablespoon

  • Water measuring cup

  • Small bowl

  • Cutting board

  • Kid safe knife

  • 8 popsicle molds (should hold 3-4oz ounces of liquid each)

  • Optional: juicer for beets, veggie peeler

Instructions:

**IMPORTANT never put you hand near the blender blades or inside the blender, they are ninja swords and are very dangerous, ask an adult for help**

  • If you are juicing your Beets make sure to ask an adult for help

  • Veggie peel the skins from the Beets, then juice

  • Remove Cherries from the freezer and thaw for 5 minutes

  • Roll your Lemon back and forth on the cutting board a few times, this will make it easier to squeeze

  • Cut your Lemon in half and squeeze into a bowl removing the seeds

  • Throw the Cherries, Beet Juice, Maple Syrup and Lemon Juice into the blender

  • Cover and blend until smooth

  • Pour liquid into your popsicle molds leaving about ¼ inch from the top (water expands and they will overflow if you overfill)

  • Freeze overnight

(Important Note; best to put in the back of the freezer so they get a good hard freeze)
